Bacteria often found in the Kombucha

Bacteria of the genus taxonomic Gluconacetobacters are nitrogen fixing and producing cellulose. Cellulose is the main substance of the mass that floats in your kombucha. These bacteria also produce gluconic acid and acetic acid. They are aerobic. Gluconacetobacter kombucha is a unique species of the kombucha tea. Gluconacetobacter xylinus (another name: Acetobacter xylinum) is often also present in the Kombucha. Xylinoides Acetobacter bacteria, Acetobacter aceti and Acetobacter pasteurianus may also participate in the fermentation of this beverage.

 

Many other species of bacteria may be present during the brewing of Kombucha tea such as bacteria of the taxonomic genus Lactobacillus and Pediococcus, which converts the sugars into lactic acid.
